Currently (XnView 1.82 & 1.90) there are no custom hotkeys. So you cannot assign a hotkey yourself.

There are various topics dealing with custom hotkeys, please use forum search to find these.

How to change, or/and create new keyboard shortcuts

Currently it's the only way, just a workaround, but a keyboard shortcut for "change timestamp" would be really useful.
