Create your categories as normal, with the hierarchy you want.
Under Tools, Settings, Metadata, enable "export categories to IPTC or XMP".
In each picture or set of photos, select the categories in the ...

For example, Rouman selected the following categories:

Envenement
Envenement / Mariage

XnView should put the XMP:

dc
subject[] Envenement
subject[] Mariage
lr
hierarchicalSubject[] Envenement
hierarchicalSubject[] Envenement|Mariage

But missed:

dc
subject[] Mariage
lr
hierarchicalSubject ...
