Why is that when I add a category to a file in the Categories picker, then I edit IPTC/XMP (Ctrl+I), the categories I've applied are on the Keywords tag, not on the Categories tab?

I couldn't find any way of doing it, but maybe there's a way I don't know... yet.
Is there a way to select multiple categories to be applied as a filter but using AND logic (not OR logic)?
I have several files with categories in a tree hierarchy:
A---1
A---2
A---3
B---a
B---b
B---c
C---alpha
C ...

haha, ok, fair enough, I didn't cosider "over the air" transmission of metadata, but maybe XnView monitors the folders searching for changes. Picassa does monitor for new files, but does not detect a metadata change.

I have a bunch of jpg that I already tagged. But somebody else will read those files from his user so I need metadata to be internally stored. How can I save all saved metadata in the corresponding files automatically?
