I resolved this just yesterday. It wasn't XnView, but CaptureOne that was recreating the directories due to an idiosyncrasy in the software.

Yeow, sorry, I never realized the little arrow in the bottom right retrieved all these options. It was listed there as: {EXIF:ISO Value}

Also, in the default fields for View/Info, it lists:

In the EXIF panel, under "Image" it lists "ISO speed ratings : 320" (which I just tested again, no go).
Does each camera maker choose their own nomenclature for EXIF info?

I have those same settings. It does not seem to ALWAYS happen, just most of the time.
Here is one more clue:
If under 'export catalog category' , 'Create XMP data' is unchecked, no .bak file is created, even if 'Create IPTC data' IS checked.
