I fully second your above statements. I think my initial suggestion fits well with these. It's a good idea to add an info which the default value is.
Above suggestion with default info:
QuitColorInfoMode <value>
0: Quit mode when closing image (default)
1: Quit mode when exiting XnView
2: Never quit mode automatically

True, a bit misleading. Perhaps
0: Quit mode when closing window or navigating to another image.
I have seen your suggestion with four options:
0. Reset after current image
1. Reset when closing window
2. Reset when quitting XnView
3. Do not reset
Personally I think that 0 & 1 are the same, but this might be due to my way of using XnView.

As a semantic quibble, I don't agree with the use of "quit" here, where "revert" is closer to the meaning you want. (Reset is also good.) Quit doesn't quite make sense in such a context.

In XnView 1.91 the setting is still named "ColorInfo".
For changing the default behaviour (which is "Quit colour info mode when closing image"), you have to make a change in the settings file "xnview.ini":
1.) Exit all instances of XnView
2.) Edit xnview.ini with a text editor (e.g. NotePad). xnview.ini is located either in the program directory of XnView or in "C:\Documents and settings\<user name>\application data".
3.) Find the string "ColorInfo="
4.) Change it to the value you prefer (see above).
5.) Save your changes made to xnview.ini
