How can I write EXIF data?

Hello,
I am a new user of XnViewMP, please forgive me if any of my questions has already been raised.
I have come across XnViewMP as it appears to be a very good image viewer with integrated EXIF, XMP and IPTC editor. In an attempt to organize my own photos, I would like to be able to read/write a few of these entries, probably the most popular and basic of them such as Original/Creation/Modification Date, Comments/Description, Categories/Keywords, Make/Model/Artist.
I have successfully been able to write XMP and IPTC information into some sample pictures, but I have not found the way to write EXIF data other than Dates (through the Change timestamp command). How can I write other EXIF data?
Because of the many information stored as EXIF, XMP and IPTC data, and the relative confusion that may result when working with them, is there a way to select only a limited number of such entries and have them displayed according to one's needs? (In other words, hide rows like F-Number and Colour space while keeping User comment or Camera Model)
