custom metadata

ADDED SEVERAL DAYS AFTER THE ORIGINAL POST: There were no responses, but for the reference of others, XNView does not seem set up to handle custom XMP fields, but if you search the Web under "metadata editors," there seem to be several which will do this.

I am just trying out XNView for the first time, and have not found in the general tutorials on line, the user guide, or the project wiki any information on writing to non-default IPTC/XMP fields, which is my primary goal with the software. From some of the threads in this forum, I think there is some information I have not found.
There is a question from 2009 on custom XMP from Jabulanison, but no answer. There is a staff reply from 2008, saying, XnView can only edit IPTC, but can convert IPTC into or from XMP, but that was five years ago. Specifically, I would like to write new data (not recorded in any electronic medium now) to:
1) IPTC Object Name, IPTC Caption, IPTC City, IPTC Country, IPTC ByLine, and IPTC Copyright
(some of which could be added in bulk to whole directories at a time),
2) a number of custom metadata categories for the description of works of art, which would have unique content, such as creator, type, title, subject, and so forth; and
3) a unique image ID number, which it would be wonderful to be able to autoincrement.
4) I also want to discard all the camera specs and all the geo data.
Might anyone be able to tell me how to do this, if indeed any of it is possible in XNView?
If I have been mistaken in my choice of software and most can't be done in XNView (I can live without #3), any suggestions for some GUI (not command-line) software that isn't one picture at a time (there are thousands) and that runs on Windows 7 would be very much appreciated. The images are all jpeg, so breadth of file formats is not a consideration. Open source is my preference for security reasons, but a commercial application that isn't a whole digital asset management system would be fine, too. Thank you very much.
