Question as subject suggest. Is this possible with XnConvert, preferably without using other application to stitch together a bunch of PDF files?

not yet possible...

This feature was requested recently in this post (for XnViewMP which uses the same batch convert interface) :

Currently, creation of a multi-page PDF file is only possible using XnView Classic: Tools > Multipage file -- Create.
