Keep Original Date/Time ???

Please explain which "Original Date/Time" this is referring to.The only time I do not want messed with is the "Date Taken"
My folder synchronizing program has the option to skip files with the same time stamp and works a lot quicker with that option; however, I am having a problem with some of my altered image files not getting mirrored on the back-up drives.
If I uncheck these boxes, will that fix my problem and not mess with my "Date Taken" ?
