Hi!

Why is that when I add a category to a file in the Categories picker, then I edit IPTC/XMP (Ctrl+I), the categories I've applied are on the Keywords tag, not on the Categories tab?

"Categories" in XnViewMp is the name of a tool designed to manage a database (catalog) and which allows to create or update keywords (iptc, xmp, xmp sidecar) in files (according to your own settings in settings, metadata screen)
With this tool, you can use "categories filter" and multi-criteria searches . (combine with Ctrl key, or Alt key)

The iptc/xmp field named "category" is an old field that almost nobody uses anymore. It is not at all the same thing.
