When I ctrl-f, I type in file "*.jpg"
when I press enter it pops up a big menu
I'm sure there's a good reason for this
But I'd like a way to search and display all jpg files within a folder&subs

The Focus is set to [ADD] Conditions, then with [Enter] you can display this menu.
You can use [Search] button at bottom.
But in this case you can see filename only (without size, date, thumbnail, etc.).
Please try "Quick search" and insert "jpg" only (not "*.jpg") to display JPEG files with thumbnail and other informations.
You can also try with View -> Show files in subfolder and then use Quick search to find JPEG files in all subdirectories.
