When I dbl-click on an icon its related image is opened into a larger 'Viewer' window, and each file clicked opens its own unique Viewer window.
Is there a way to have each file open into one single 'Viewer' window, replacing the previously viewed image in the same Viewer window, instead of having multiple Viewer windows open one after the other?

Yes.
You can use the Full Screen instead of Viewer.
You have some options to configure the Full Screen how it fits better for you.
Press F11 in the default keyboard mapping to activate it. Press Esc to return back. Also you can click with the middle mouse button to activate it.
With the Full Screen activated, if you move the mouse in the upper part of your screen you will find the thumbs from where you can choose another image.
Also, if you have 2 monitors, perhaps is better to configure in Tools | Settings | Full Screen to use the 2ndary monitor for the full screen and the 1st for the thumbs.
But if you want to activate it by double-clicking you can do this from Tools | Settings | Interface | Switching mode.
You can add a toolbar and configure it with some editing and I/O tools. (see Tools | Settings | Full Screen)
