Select the file in XnView, choose Tools>View in hex mode. (temporary show all files with 'filter' if it isn't listed in the current 'items displayed list')
So you can't from the view mode open a hex view from a file? But perhaps not important (0.00001% of users need that) ??

You will be able: open file in view mode, then Tools>View in hex mode (it's the only one to have, both in Browser and Viewer).
+Currently, you get an error message when you open a non-displayable file. It should display its Hex view directly if Option Read/Write>'Show hex for non-displayable file' is checked... => you will get Hex view for any file through Open.

Uhm, text/HTML/PDF/... files etc are displayed without using hex mode. So what kind of file is usually opened with XnView (an image viewer) in hex view? For hacking savegames or the like I need an editor, not a viewer, thus I'll not use XnView for that...you see I'm stuck and may discover a new use for XnView

That's why I also said that 'Open' should directly display Hex view of non displayable/image files when 'Hex' options is on. It would work, no?
(ie: select a non-displayable file in open dialog -> you automatically get a Hex view)
