Using Categories

Hello, new to XnView and have three questions:

1. Can I add categories that are not already on the list? I'd like to add more categories, such as "boating," "skiing," etc. Is there a way to add them?

2. Can photographs have more than one category? For example, could a picture of a sunset be part of "vacation," "beach," and "landscapes?"

3. Are tags used the same way - to assign searchable attributes to a picture, or are tags only used to "tag" certain images so you select them as a group, and then untag them?

yes, by right clicking

only to tag files to process...

Looking at answers supplied in Dec 2014 re Categories to mvrock I'm a little puzzled.
1. mvrock refers to "boating" and "skiing" but yet my screen for category limits input to only 3 characters. Are we on the same subject?
2. Pierre's answer refers to "right clicking". Sorry, but where/what am I meant to right click?
3. I see that there are 8 categories shown under Photographs for each image properties. How can I make practical use of these categories beyond using the 3 character categories in point 1?
