Hello,
I am looking to convert .thmb files and have fallen at the first hurdle. I have downloaded the sample .ithmb files located at http://www.vhromanov.com/Males/Cody/iPo ... Cache/F00/ and was able to open and extract contents of the following two files;
T149.ithmb
T251.ithmb
Using the portable http://www.ithmbconverter.com to confirm their contents (it failed on T200.ithmb interestingly). I would like to repeat this with XnConvert however all I get is;

I am very aware that in the multitude of options I am likely not setting things correctly, in fact they are just as default in a fresh install from the latest linux 64.deb which I installed on mint 17.3.
Any advice on what I need to do to get the conversion working correctly or at least a resource for me to check? A search for Ipod or ithmb on the forum returns nothing.

I don't think there's anything wrong with your settings because we've had a similar bug report a few months ago. Unfortunately we're dealing with a proprietary format, which means that the specs are not publicly available. Pierre (the developer of XnView) will have to look into it.
Update: With help of a hex editor, I was able to extract image data (100×73 pixels) in JPEG format from T149.ithmb & T251.ithmb:
