I don't know anything about embedding metadata, but I guess that it should be possible to remeove metadata (eg IPTC) from a picture without saving / loosing picture quality. Removing IPTC or other metadata should be a lossless transformation like adding metadata.
(and another very minor thing: When I add no ITPC (but I add it!) to the picture, it does not check when my addition was empty or not. It says "IPTC", although there is nothing inside)

I have been wondering the same thing. Is it possible to delete meta data without separately saving the image? At least I haven't seen such function in XnView.
