I have opened a folder in XnView, selected an image, and ticked a category. How do I get XnView to save this category to the files data? I have closed XnView, gone to the image in Explorer, and the tag is not on the files properties.
I can't find anything in XnView like "Save changes to Image file" or similar.

Thanks for that. That option just didn't seem to me to be what I after, and I didn't want to do anything that might make serious detrimental changes to my images.

If you mean to save the checked categories to the selected image(s) file(s):
You just have to select another image, the saving is automatically done when the "select" is lost.
Verify that the Option/Meta "Export Category ... is checked.
Suppose you want to set one, or several, categories to several images. Select the images, then the categories, then select any other image, et voila, it is done. The updating of the image files does not change the previously set categories! This is a very nice feature of XnView making tagging very fast.
Warning: The file update may take some time if the files are on a slow device (such as a network drive) and/or there are many files to update. It is important to be patient and wait until the end of updating before doing anything else.
Unfortunately I did not notice anything like a "progress bar" during updating. One trick to know when the updating is done is to check the category panel. When the updating is done, the category panel displays the categories of the image selected to trigger the updating.
