Some formats miss metadata settings that can be seen in 'Save as..' dialogs.

in case format (or current version of xnview) does not support metadata - checkboxes shall be unticked,
because ticked checkboses mean metadata will be written/kept

This problem is supposed to be fixed in XnView MP 1.4.3. Please check and confirm the bug fix here.
