Convert image to C data array

Looks like XnConvert supports four methods to convert an image to a text, hexadecimal C data array output file. What are the differences between using: XBM, XPM, YUV 16 bits, and YUV 16 bits interleaved?

Not YUV, XBM is for binary and XPM 24bits
