I just went through the Edit XMP and Edit IPTC dialogs to see if there may be anything else that may have the same issue.

In Edit XMP, excepting the rating and the copyright status functions discussed here, all other items on all the tabs are indeed actually "empty" fields that have to have something written into the them to become "not empty." So, I assume that they will respond correctly to the "empty"-based instructions ("Keep original value if new value is empty" and "Replace only if original value is empty").

Interestingly, in the Edit IPTC dialog, there are two dropdown menus on the Status tab. However, both of them, in there default, unused state, show nothing ("empty" thus?); you have to click on the dropdown button to see the choices, AND, you can re-choose the nothing state. Could that be of interest for the Edit XMP dialog's Copyright status dropdown? (EDIT: And now that I think about it, one could imaging the rating function as a dropdown as well...)
