how to batch convert gray to b/w

I understand the setup and executed fine a binary convert, but the images are not black and white as there are gray pixels present.

How to reduce the color levels to 2?

JPEG can't save B&W picture only greyscale & RGB

OK, thank you. Irfanview gets around this limitation somehow, and saves the result as a jpg.

It's a limitation of the JPEG format
