When I insert a text in a foto, I am not able to change it / delete it afterwards. Is there any trick to do this ?

Text inserted using XnView software becomes part of the image: layers are not supported, so the text is not placed on a separate text layer which would enable it to be edited later. If you require a freeware program that supports layers for future work, you might look at Paint.NET.
