These are the properties of your image viewed in XnView MP as displayed in Image > Properties... [the 'i' icon on the toolbar]:


The DPI value isn't displayed but is in fact 72 DPI, so the value displayed in Photoshop is actually correct.

If you look at the displayed 'Print size' both the image width and height are close to 1000 cm, so the issue seemingly lies in your Epson scanner settings: if that is the file exactly as output from the scanner, I have no idea at the moment where the problem could be.

If you need to print the image at a particular print size you should be able to do that in the XnView MP print settings, if you would like to correct the image DPI to convert the image to a desired physical size you can change the image size in Image > Set DPI..., or you can use Image > Resize... to directly set a desired physical size.

Note in passing that reducing the image JPEG Quality value even slightly from 100% should considerately reduce its file size, with a significantly lower value such as 80% possibly producing an image not obviously visibly different from the original when viewed on a screen.

If I use the program provided by Canon and set the acquisition value to 300 dpi in the settings, the file that comes out has a resolution of 300 dpi even in Photoshop.

On the other hand, if I use the XnView MP program, I set the settings to 300 dpi but in Photoshop I have 72 dpi.
