Is it possible to specify range of the "red" which should be removed when applying Red Eye correction?
Or even optional mapping table for this (Map this color to this etc)?

1. Undo the correction (Edit->Undo, Toolbar or Ctrl+Z)
2. Zoom the image a bit
3. Mark one red eye, only
4. Apply the red eye correction, again.
5. Repeat 1-4 for the second red eye.
I don't know the details of the algorithm. BTW, the algorithm has changed in one of the last XnView versions. My hint above is just my experience with the photos that I have corrected using XnView.
