I want to MOVE files from one folder into another folder, on the same drive.
But I have to hold down the Command key (MAC) or it will COPY by default.
I looked everywhere to find a box I could click to change this default action.
This is very annoying when moving many pictures.
I know there are other ways to do a MOVE but I want to drag and drop.

Copying instead of moving is a bug on MacOS, see topic Drag and Drop Copy/Move. I just moved your request to "MP - Bug reports" that's the right place for it.

I use XnViewMP 0.84 on macOS 10.11.5, and can confirm this behaviour.

This problem is supposed to be fixed in XnView MP 0.85 beta 1. Please check and confirm the bug fix here.
