Hello.
I have a small issue with the catalog: every so often (roughly every 2–3 weeks) it gets completely wiped, and I have to rebuild it for the folders I normally use, which is quite inconvenient. Is this normal behavior, or is something going wrong on my end? Is there a way to prevent it?

Of course it's not normal. Without any knowledge of what's going on on your computer or what you might be doing, there's no way to suggest a way to "prevent it".
But I can say rebuilding the db from folders is unnecessary. Just backup the database. There are 3 files you need to preserve:
xnview.ini
xnview.db
thumb.db
The ini contains your main settings, so losing it is an annoyance. (There are other settings scattered in other files; check modification dates)
But the 2 db files are the entirety of the database. Copy and preserve those two .db files and you won't lose any data. Just make sure the app is not running when you save or restore them.

It reports the story of one other person who was experiencing a similar problem on his Mac, but it was happening much more infrequently, and his meaning of "wiped" was perhaps not the same as yours, so it may not have anything to do with what you're experiencing.
